  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder

  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • parsley flakes (for garnish)

Instructions

  1. Preheat oven to 385°F (195°C). Line a baking sheet with parchment paper.
  2. Wash mini potatoes thoroughly and soak them in cold water mixed with 2 tablespoons of lemon juice.
  3. Carefully carve skull faces into each potato using a paring knife, then return them to the lemon water.
  4. In a bowl, mix olive oil, remaining lemon juice, salt, and spices until combined.
  5. Drain potatoes and toss them in the seasoning mixture until evenly coated.
  6. Place carved potatoes on the prepared baking sheet with faces up and bake for about 30 minutes until golden brown and tender.
