  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour (plus extra for coating)
  • 1/4 cup cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon or orange (optional)
  • 2 large eggs (beaten, for coating)
  • Vegetable oil (for frying)
  • Ground cinnamon and sugar (for dusting)

Instructions

  1. In a medium saucepan, heat whole milk with half the sugar and lemon/orange zest over medium heat until warm.
  2. In another bowl, whisk together flour, cornstarch, remaining sugar, and egg yolks until smooth. Gradually mix in the warm milk while whisking.
  3. Return mixture to saucepan and cook over medium heat until thickened. Remove from heat and stir in vanilla extract.
  4. Pour pudding into a greased shallow dish and refrigerate for at least 3–4 hours until firm.
  5. Cut chilled pudding into squares; dredge in flour then dip in beaten eggs.
  6. Heat vegetable oil in a skillet over medium heat. Fry each square until golden brown on both sides; drain on paper towels.
  7. Dust with cinnamon-sugar before serving warm or at room temperature.
