  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Cajun seasoning, plus more to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 tbsp chopped parsley or chives (optional)

Instructions

  1. Cook the penne in salted boiling water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a large skillet, heat olive oil and butter; sear the chicken until golden brown and fully cooked. Remove from skillet.
  4. In the same skillet, sauté remaining garlic; add heavy cream and broth, simmer for 2-3 minutes.
  5. Stir in cheeses until melted and creamy.
  6. Toss cooked penne with sauce; adjust consistency with reserved pasta water if needed.
