  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sausage and cook until browned (8–10 minutes). Drain excess grease.
  3. Sauté onion until softened (5 minutes), then add garlic for an additional minute.
  4. Stir in bell peppers and sauté until softened (5–7 minutes).
  5. Add diced tomatoes, black beans, corn, oregano, basil, cumin, salt, and pepper; mix well.
  6. Simmer on low for 10–15 minutes to meld flavors.
