  • 1 pound chicken sausage, casings removed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes (14.5 ounces), undrained
  • 1 can black beans (15 ounces), rinsed and drained
  • 1 can corn (15 ounces), drained
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and add the chicken sausage. Cook until browned and cooked through (8-10 minutes). Drain excess grease and set aside.
  2. Sauté the onion in the same skillet until softened (about 5 minutes). Add garlic and cook for another minute.
  3. Stir in bell peppers and sauté until softened (5-7 minutes).
  4. Combine diced tomatoes, black beans, corn, oregano, basil, cumin, cayenne pepper (if using), salt, and pepper. Return the sausage to the skillet and mix well.
  5. Reduce heat to low and cover. Simmer for 10-15 minutes to meld flavors.
  6. Serve hot with optional garnishes like cilantro or lime juice.
