  • 2 tablespoons olive oil
  • 1 lb lamb shoulder or stew meat, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 large carrots, peeled and chopped
  • 2 small zucchinis, sliced into half-moons
  • 1/2 cup prunes, chopped

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add lamb chunks and sear until browned on all sides (about 5-7 minutes).
  2. Sauté chopped onion until translucent, then add minced garlic and grated ginger. Cook for an additional 2 minutes.
  3. Stir in turmeric, cinnamon, cumin, smoked paprika, salt, and pepper; cook for about 2 minutes to release the spices’ aromas.
  4. Add chickpeas, carrots, zucchinis, and prunes to the pot; mix well.
  5. Pour in enough water or broth to cover the ingredients. Bring to a boil then reduce heat to low. Cover and simmer for about 1.5 hours until the lamb is tender.
  6. Serve warm over couscous or rice.
