  • 2 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature for frosting
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract for frosting
  • 1 tsp fine salt for frosting
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two round cake pans with grease and parchment paper.
  2. In a bowl, sift together the cake flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, beat the unsalted butter and granulated sugar together on medium speed until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition. Then mix in the buttermilk, vegetable oil, vanilla extract, white vinegar, and green gel food coloring until combined.
  5. Gradually add the dry ingredients into the wet mixture. Mix until just combined; do not overmix.
  6. Divide the batter equally between the prepared pans. Bake in the preheated oven for about 28 minutes or until a toothpick inserted into the center comes out clean. Allow cooling in pans before transferring to wire racks.
  7. In another bowl, beat together softened unsalted butter and cream cheese until smooth. Gradually add powdered sugar while mixing on low speed. Then add vanilla extract, salt, and heavy whipping cream until well blended.
  8. Once cakes are completely cool, level them if necessary. Place one layer on your spinning cake stand. Spread a layer of cream cheese buttercream on top before adding the second layer. Apply a thin crumb coat around the entire cake before chilling it in the fridge for about half an hour.
  9. After chilling, apply a thicker layer of cream cheese frosting all over the cake. Use your colored gel food colors to create fun decorative details like Frankenstein’s face!
