  • 1 1/4 lbs chicken breast (diced)
  • 12 oz gluten-free farfalle
  • 2 cups dairy-free heavy cream
  • 8 oz dairy-free parmesan cheese (shredded)
  • 2 cups chicken broth
  • 4 tbsp dairy-free butter
  • 2 tbsp minced onion
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp Italian seasoning
  • 1 2/3 tbsp gluten free 1:1 flour
  • 2 cups chopped spinach
  • 2 tbsp pasta water (as needed)

Instructions

  1. Boil the gluten-free pasta in a large pot according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. Season diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt.
  3. Sear the seasoned chicken in a skillet with olive oil over medium heat until cooked through (about 3-4 minutes each side). Remove from skillet.
  4. In the same skillet, melt dairy-free butter and sauté minced onion until fragrant. Stir in gluten-free flour to create a roux.
  5. Gradually whisk in chicken broth and dairy-free cream, adding chopped spinach as it simmers for about 3-4 minutes until thickened.
  6. Incorporate shredded dairy-free parmesan until melted and smooth.
  7. Toss in drained pasta and cooked chicken; mix well to coat everything in sauce.
