  • 1 tbsp vegetable or coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp chili flakes (adjust to taste)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping and measuring as needed.
  2. In a Dutch oven over medium-high heat, add oil. Sear beef cubes in batches until browned on all sides; set aside.
  3. In the same pot, cook chopped onions until translucent. Stir in garlic and ginger.
  4. Add red curry paste, cumin, turmeric, and chili flakes; mix well.
  5. Return beef to the pot, add coconut milk and broth, seasoning with salt and pepper.
  6. Bring to a gentle simmer, cover, and reduce heat to low; cook for 2-3 hours until beef is tender.
  7. Stir in lime juice just before serving.
