  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 oz. cream cheese
  • 3 Tablespoons butter
  • ⅔ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 Tablespoon mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix flour, baking powder, cinnamon, ground cloves, ginger, and salt; set aside.
  3. In another bowl, cream together butter, brown sugar, and white sugar until fluffy.
  4. Add pumpkin puree, egg, and vanilla extract; mix until combined.
  5. Gradually stir in dry ingredients until just combined.
  6. Scoop dough into balls (about 1 ½ tablespoons each) on a prepared baking sheet.
  7. Gently flatten each ball to about ⅓ inch thick.
  8. Bake for 10–12 minutes or until set.
  9. Let cool on a wire rack before frosting with cream cheese mixture.
