  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup dark brown sugar (packed)
  • 1/4 cup unsulphered molasses
  • 1 teaspoon pure vanilla extract
  • Icing: powdered sugar and heavy cream or milk

Instructions

  1. In a medium bowl, whisk together flour, baking powder, cinnamon, ginger, all-spice, cloves, and salt. Set aside.
  2. In a large bowl, cream together the butter and dark brown sugar until light and fluffy.
  3. Mix in the molasses and vanilla until fully combined.
  4. Gradually add dry ingredients to the wet mixture, folding until smooth. If too sticky, chill in the fridge for 15–20 minutes.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Shape dough into balls: (1 tablespoon for body, 1 teaspoon for head, and ½ teaspoon for arms/legs).
  7. Arrange on a prepared baking sheet with space between each figure.
  8. Chill shaped cookies in the freezer for 10–15 minutes.
  9. Bake for 13–17 minutes until puffed and set.
  10. Cool on a wire rack before decorating with icing.
