  • ⅓ cup honey or maple syrup

  • 1 cup dark chocolate chips (or semi-sweet)
  • 1 tbsp coconut oil

Instructions

  1. Line a mini muffin tin with paper liners.
  2. In a saucepan over low heat, combine peanut butter, honey (or maple syrup), vanilla extract, and salt; stir until smooth.
  3. Remove from heat and mix in puffed quinoa until evenly coated.
  4. Spoon the mixture into muffin liners and press down gently to compact.
  5. Chill in the refrigerator for about 20 minutes to firm up.
  6. Melt dark chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.
  7. Spoon melted chocolate over each base and sprinkle with flaky sea salt if desired.
  8. Return to the fridge for another 30 minutes until set.
