  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup ranch dressing
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Coat chicken breasts with the seasoning mixture.
  4. Place seasoned chicken in a baking dish and bake for 20-25 minutes until cooked through.
